I was going to write a little about confusion today…but after
thinking about all the confusing things I get confused about, I realized I was
too confused to write! Plus, a lot of
what confuses me is pretty sad happenings, and why make everyone sad? I do
know that God is not the author of confusion, so… I’ll toss my confusion His way,
and just continue to trust Him.
Instead, I’ll just write a confusing, disjointed entry for your reading "pleasure."
I’m stuck on 31-32 pounds this week.
I’m not confused about that.
Stuck, but not confused.
I am slowly adding a carbier items to
my menu (no sugar, of course). I’m thinking that “sugar free”
can’t be all that healthy…but I am not health conscious enough to want to just
eat all natural or organic. (My spell
check says “carbier” is not a word. It
is now.)
Next week, I’m going on vacation. I’m going to try to post here while I’m out
and about, a few pictures and perhaps an update or two. Just because I’ll be on vacation, doesn’t
mean I have to revert to any old eating habits I’ve gladly left behind! I will weigh the Monday I leave, and the
Monday morning that I’m back. I fully
expect a loss.
I actually battled in my head eating pancakes at my favorite
vacation pancake house. I did (finally) rule that out…but I have to
say, there was a few days there when I had decided I was going to do it! Ultimately, I think pancakes are not worth
wasting the carbs on. (My grammar-police
brain is fighting me about ending that sentence in a preposition, but I’m going
to do it, anyway.)
I’m missing crackers lately. I’ve found a low-carb cracker
recipe using flax seed meal, which is gluten free, for
those who need it. Wal*Mart carries flax
seed meal or about $3-$4. In the meantime, I’m going
to see how sugar free bread tastes, very toasted, to go with my chicken
salad. I’m thinking SF bread won’t
taste good no matter what I do to it!
UPDATE: I found some flax seed bread with a net carb count of 6. (There is bread with lower net carbs, too.) And I found some soy flour, which is not too bad on the carb count (10 for 1/4 cup).

Even though I’m not a Cracker Barrel lunch/dinner fan, I may
be tempted to try it more often since I’ve found out they have a low carb menu! Breakfast is a very easy meal to eat
low-carb, and Cracker Barrel does have a good breakfast.
Low carb eating out is so much easier than counting calories
and/or fat (a near impossibility!) In
two days, I will have been doing this low carb thing for exactly two
months. Two months without a
binge! “I am grateful” does not even
begin to cover how I feel.
I hope your weight loss journey is going smoothly on a successful
path, but even if it’s not, it does not define the wonderful person that you
are, and that God created you to be!
Do you guys have Trader Joe's where you live? I know they had some gluten free crackers there the other day that didn't taste too bad, but I don't have the box any more to tell you what the carb count was on it. I think your vacationing low carb is very doable. I've done it a few times and did allow myself a little leeway here and there, but more towards the end of the vacation than the beginning. I did find I came home a few pounds up but once I went back on plan the weight came off within the week.
ReplyDeleteYou did a significant weight loss in two months; I'm sure your body is adjusting a bit before it starts losing again, just hold steady with what you are doing and how you are eating :)
